The bright peppered tomato stew reflects the coastal cooking traditions of Ghana’s Central Region. Salt hangs in the air. Wooden paddles strike a canoe. Three stones rest in the sand with fire burning between them. Along Ghana’s Central Region coast, Fante Fante begins at the Atlantic’s edge, where the morning’s catch still shines.
